Coffee cherries at different stages of sun-drying

Coffee processing is highly labor-intensive. Even with newer machines for sorting and roasting, the quality still depends on careful handling of each tiny fruit, from drying to turning and selecting. In Yunnan, this work often brings minority communities together, with families and neighbors sharing tasks across the harvest and processing season.
