Sun-drying coffee fruit on the ground in Yunnan

Yunnan’s plateau climate makes it a great place for coffee processing. At a local estate we visited, coffee cherries were spread out everywhere, laid in the sun to dry slowly and evenly before the next steps of sorting and roasting.
