Guac & Roll Launching Cuban-Mexican Dining Spot with Outdoor Seating
WESLEY CHAPEL, FL — Guac & Roll, a Cuban-Mexican food truck from Keilin Fernandez and her husband, Hector Ramirez, is preparing to open at 29602 Wesley Chapel Boulevard, Wesley Chapel, FL 33543.
Fernandez told Business Debut the couple is finishing work on the space, including an exterior sign and a stage for live music, with hopes of opening by mid-June. The business is built around the food, music and community Fernandez grew up with in Cuba, she told Business Debut.
What to Expect
Guac & Roll serves a Cuban-Mexican menu with tacos, quesadillas, burritos, Latin Power rice bowls, sandwiches, coffee, smoothies and natural juices, Fernandez told Business Debut.
Fernandez said the goal is to serve fresh food without frozen meals. “That’s the way I eat at home with my husband,” she told Business Debut. “Everything fresh, everything completely natural.”
The food truck has about 40 seats with tables, umbrellas and plants, Fernandez told Business Debut.

Menu and Vision
Menu highlights include Cuban-style ground beef, ropa vieja, slow-cooked pork, Cuban sandwiches, whole fried fish and a traditional Cuban soup, Fernandez told Business Debut.
Fernandez said the whole fried fish is inspired by her father, while the soup is meant to honor her mother. The slow-cooked pork and ropa vieja are among Ramirez’s favorites, she told Business Debut.
The name Guac & Roll also ties into the couple’s plans for music at the space. Fernandez said Ramirez is building a stage for live music, with plans to invite local musician friends to perform.
Fernandez is also a musician who plays guitar, piano, ukulele and bass, and she sings. She previously taught at Citrus Park Middle School and performed with bands in Cuba, she told Business Debut.
Family and Community
Fernandez said Guac & Roll is meant to feel like the gatherings she hosted at her home in Cuba, where friends, artists and musicians would come together over food and music.
“I want to build something like my house in Cuba,” Fernandez told Business Debut. “Have a community to support each other.”
Fernandez also credited her aunt, Maitee Fernandez, as a major source of support since she came to the U.S. from Cuba. She said Maitee Fernandez has been “like my mom” and has supported her through the challenges of building a new life in the U.S.
Opening Timeline
Guac & Roll plans to open daily from 10 a.m. to 10 p.m. on weekdays and 10 a.m. to 11 p.m. on weekends, Fernandez told Business Debut. She said the team hopes to stay open until midnight on weekends once additional help is in place.
