For everyone asking my focaccia recipe when enjoying it at our house (and for anyone else wanting to make focaccia at home) here it is: Step 1 400 grams flour 280 grams water 9 grams dried yeast Combine these and let it rest for 15 minutes Step 2 Add 12 grams of salt and let it again rest for 15 minutes Step 3 Add 20 grams of olive oil and let it rest for 15 minutes Step 4 Fold the dough. Turn it 90 degrees and fold again. and another 90 degrees turn and a fold Let it rest for 40 minutes Step 5 Repeat step 4 (including rest time) twice Step 6 Grease an oven pan with some olive oil and sprinkle some semolina on the bottom Put the dough in the oven pan, flatten it and spead some olive oil on top. Let it proof at room temperature for 1 to 1 1/2 hours. This all cold be done the day before, leaving the dough in the fridge overnight. Step 7 Flatten the dough and let it rest for 30 minutes Preheat the oven on 220 degrees Celsius (430 Fahrenheit) Step 8 Make a salamoia by mixing 30 grams of water and 30 grams of olive oil and shaking it very well Make little holes in the dough and spread the salamoia over it Sprinkle a bit of fior di sale over the dough Bake it in the oven for 30 – 40 minutes until it has a nice yellow color Let it cool down and enjoy a delicious focaccia
