  "textContent": "Michelin-starred sushi chef Endo Kazutoshi has spent his life mastering rice: every grain, every drop of water and every shift in climate shape his craft. Endo Kazutoshi is walking through the streets of Berlin when he mentions over the phone that rice can speak; not in words, obviously, but in subtle signals: its weight, its sound, its feel and the moment the water shifts from cloudy to clear.
