Almost every household in Guizhou keeps some form of sour soup base at home. When it is time to cook, a ladle of the soup base is taken from storage, added to water, and built into a meal with vegetables, fish, or meat.
Today, while most people in Guizhou live in larger cities and often rely on packaged sour soup bases for convenience, some minority communities still choose to make it themselves. Ahua is one of them. She can immediately tell the difference between Guizhou’s local cherry tomatoes and regular tomatoes, insisting that the smaller local variety produces a deeper and more balanced sourness after fermentation.
In Miao culture, serving guests food made with sour soup prepared by one’s own family carries special meaning. To bring out a jar fermented at home is not simply about flavor, but also hospitality, generosity, and respect. It is often one of the first dishes shared to begin a meal together.
