During our visit to Luzhou, we spent time with our old friend Chef Tang at MountRiver Restaurant, where he demonstrated a number of traditional local dishes. While much of the equipment in the kitchen is modern, you can still recognize the way things are done.
The large cleaver used for almost everything, the round wooden chopping board worn from years of use, these details say a lot about how the kitchen works. Even with newer tools around, the foundation hasn’t really changed.
