Mini pancake and juice cart opens in downtown Forest Grove

A purple food cart selling mini pancakes, natural fruit juices and Dubai chocolate strawberry cups opened behind Picasso's in downtown Forest Grove on Tuesday. Mina's Mini Pancakes & Antojitos is a walk-up spot that owner Romina De León has been working to open for nearly a year. The cart is located directly behind Picasso's Art & Antiques at the corner of Ash and Pacific Avenue. Blink and you'll miss it, but the purple cart has sat for enough months to draw curiosity from anyone parking in the city of Forest Grove's lot between Council and Ash Street. Wonder no more. It's open for business. It's the first business foray for De León. "I have a lot of experience in kitchen ways and how to prep, but this is the first time," said De León. Menu and location shots. For now, it's sure to draw customers from the nearby city offices, library patrons, Theatre in the Grove denizens, and local journalists whose offices are mere steps away.
