Olive Ave., West Palm Beach, FL 33401 at the end of May.\n\nThis will be the brand’s second location following its Boca Raton shop, with a third planned for Wellington that Business Debut previously reported on. While that location remains in development, this West Palm Beach opening is expected to come first, Leeds told Business Debut.\n\n## What to Expect\n\nGarden Butcher is built around healthy prepared foods, combining a market and cafe format with both grab-and-go meals and made-to-order options.\n\nThe West Palm Beach location marks a significant expansion from the original Boca Raton shop, coming in at approximately 2,300 square feet. The space will include about 70 seats, allowing customers to dine in comfortably in addition to picking up meals to go, Leeds told Business Debut.\n\nThe restaurant will be housed in a converted former bus station, with the design leaning into the building’s original retro character. “It was a former bus station… it has this very retro vibe and we’ve really leaned into that with our decor,” Leeds told Business Debut.\n\n## Menu and Vision\n\nThe concept centers on clean, ingredient-focused cooking, with all menu items free of seed oils and refined sugars. The menu also caters to a range of dietary preferences, with many items naturally gluten-free.\n\nOfferings include wraps, bowls, salads, sandwiches, smoothies, and coffee, alongside a rotating selection of prepared meals available in the market. Leeds told Business Debut that the chicken Caesar wrap and Strawberry Glow smoothie are among the most popular cafe items, while prepared food favorites include grass-fed sliders, gluten-free chicken tenders, and buffalo cauliflower.\n\n“We specialize in really clean, seed oil free healthy,” Leeds told Business Debut.\n\nImages from Garden Butcher website\n\n## Ownership and Background\n\nLeeds is a formally trained chef who attended both culinary and pastry school before working in restaurants and as a private chef for families.\n\nShe opened the first Garden Butcher location after moving to Boca Raton in 2018, with the goal of creating a concept that delivers high-quality, clean meals in a more accessible format.\n\n“I wanted to be able to feed the community… and make this storefront that’s accessible for everyone but still feel like you’re getting that personalized private chef dinner,” Leeds told Business Debut.\n\nLeeds said the concept is also shaped by her experience as a mother of four, emphasizing the need for convenient, healthy meals that don’t compromise on quality.\n\n“We’ll never ever compromise on what we do in terms of quality,” Leeds told Business Debut.\n\n## Opening Timeline\n\nThe West Palm Beach location is targeting an opening at the end of May, Leeds told Business Debut.
