  "textContent": "JACKSONVILLE, FL — Patrick and Leah Pendergast are targeting a June opening for a new Potbelly Sandwich Works at 13529 Beach Blvd. Ste. 101, Jacksonville, FL 32224. Patrick Pendergast told Business Debut the Beach Boulevard restaurant will be the couple’s second Potbelly in the Jacksonville market, with their first location set to debut in April at 9908 Old Baymeadows Road, Jacksonville, FL 32256.\n\nThe Beach Boulevard opening is part of a larger Northeast Florida growth plan. Pendergast said the team has seven Potbelly locations planned for the region and wants to expand thoughtfully while building buzz and serving the Jacksonville community.\n\n## What to Expect\n\nPotbelly Sandwich Works is a Chicago-born sandwich concept known for toasted subs, along with milkshakes, soups, salads, mac and cheese and cookies made fresh in shop. Pendergast said the menu’s variety helps set it apart from other sandwich chains.\n\nThe Beach Boulevard restaurant is expected to have about 20 seats inside, with a few patio tables also planned. Pendergast described the brand as more than a quick stop for food, saying Potbelly aims to create “a welcoming environment” with “good people, good vibes” where guests can relax and not feel rushed.\n\n## Menu and Vision\n\nPendergast said his longtime favorite menu item is the Wreck, made with salami, roast beef, turkey, ham and Swiss cheese, toasted and served hot. He also pointed to Oreo shakes and the brand’s homemade cookies as standout items.\n\nFor Pendergast, opening Potbelly is also personal. After a career in corporate sales, he said his priorities changed when his son was born and he began looking for something that would let him be more present with his family while building something he cared about.\n\nPotbelly was his first job as a teenager in Chicago, where he said he learned discipline, work ethic and a passion for serving people. “I give a lot of credit to Potbelly,” he told Business Debut. “I always go back to my time at Potbelly and how much I really just loved being there.”\n\nPendergast said the couple hopes the business becomes part of the fabric of the area by creating jobs, supporting local organizations and helping foster a neighborhood feel in the community.\n\n## Opening Timeline\n\nThe Beach Boulevard location is targeting a June debut.
