The team is remodeling the former barbecue restaurant and is targeting a soft opening the week of March 9.\n\n## What to Expect\n\nThe restaurant will offer full-service dining along with a cafeteria-style hot table at lunch for guests looking for a faster option.\n\n“As of right now we are working very hard to get everything together,” Monasterio told Business Debut, noting the space is being updated with a new layout and equipment. He said the goal is to create a welcoming environment for families and regulars alike.\n\n## Menu and Vision\n\nDon Jose’s will serve a mix of American and Mexican breakfast, a nod to customers who previously supported Monasterio’s breakfast concept at Mango Plaza before it closed due to redevelopment.\n\n“For breakfast we are going to have American and Mexican breakfast kind of like a mix,” Monasterio told Business Debut. The morning menu is expected to include huevos rancheros, huevos con chorizo, chilaquiles, and breakfast burritos, alongside traditional American plates.\n\nFor lunch and dinner, guests can expect Tex-Mex favorites such as fajitas, nachos, and chimichangas, as well as traditional Mexican dishes.
