"textContent": "**WINSTON-SALEM, NC** — California Burritos Express is targeting an opening in about one month at 2021 Griffith Rd Unit 100, Winston-Salem, NC 27103, owner Marco Rodriguez told Business Debut. The restaurant is awaiting approval of a fire suppression permit before opening.\n\nRodriguez said the space was previously home to a Tex-Mex restaurant and required system updates, but much of the infrastructure was already in place.\n\n## What to Expect\n\nCalifornia Burritos Express operates as a fast-casual, quick-service restaurant with a build-your-own burrito format alongside signature menu items. Rodriguez said the concept is similar in service style to Chipotle but emphasizes authentic recipes and made-to-order preparation.\n\n“Nothing’s frozen, everything is made to order,” Rodriguez told Business Debut.\n\nThe Winston-Salem location will include indoor dining and a patio, along with takeout and third-party delivery options.\n\n## Menu and Vision\n\nThe Winston-Salem restaurant will also feature a margarita bar, a concept the brand introduced in its Greensboro location.\n\nCalifornia Burritos Express first opened in Burlington in 2021, followed by locations in High Point and Greensboro. The Winston-Salem restaurant will mark the fourth location for the growing brand.\n\nRodriguez, who has more than 20 years of experience in the restaurant industry and previously worked as a district manager for Subway, operates the business alongside his father-in-law, Antonio Herrera.\n\n## Opening Timeline\n\nThe restaurant is hoping to open within about a month, pending final fire suppression approval.\n\n## Hours\n\nCalifornia Burritos Express plans to operate seven days a week from 10 a.m. — 10 p.m.\n\n## Follow for More\n\nFollow on Facebook.\n\n* * *",
