Owner Robert DeSilvio told Business Debut the shop will be the only bagel-focused concept on Siesta Key, located on the island’s south end.\n\n## What to Expect\n\nThe 750-square-foot space sits about a block from the beach and will operate as a fast-casual, counter-service concept. Seating will include six seats inside and access to approximately 20 shared courtyard seats outside.\n\nOnline ordering will be available for guests looking to pick up on the way to the beach or boat. The name reflects the small bungalow-style setting near the shoreline, DeSilvio said.\n\n## Menu and Vision\n\nThe menu will center on New York-style bagels made fresh daily, boiled and baked in-house. Bungalow Bagels plans to offer six core bagel varieties along with a rotating signature flavor to maintain daily production standards.\n\nHouse-made cream cheeses will include savory options and at least one sweet flavor, such as strawberry. Traditional toppings including salmon and fresh vegetables will also be available.\n\nIn addition to bagels, the shop will serve lattes, cold brew and Kona coffee imported from Hawaii. Cold brew beverages will be canned to order in front of guests using an in-house canning machine, allowing customers to take sealed drinks to go. Coffee ice cubes will also be available to prevent dilution.\n\nDeSilvio said the concept focuses on higher-quality ingredients and scratch preparation.\n\n## Ownership Background\n\nDeSilvio has been in the restaurant industry since age 21, when he opened his first pizza restaurant in New York. He has lived in Sarasota for 10 years and currently owns three Casa Masa locations: one on Bee Ridge Road, one in The Landings, and one in Siesta Key’s North Village.\n\nCasa Masa operates as a scratch kitchen concept known for making tortillas fresh daily for chips and tacos.
