PETERSBURG, FL —** Birria King Food Truck, a new mobile concept focused on slow-braised birria dishes, is planning a soft opening on Friday, February 7, from 1 p.m. — 9 p.m. at Outcast Brewing Company in St. Petersburg. Owner Moe Alaraj told Business Debut the truck will primarily serve the St. Petersburg and Tampa areas, with additional appearances at private events and pop-ups.\n\nBirria King operates as a food truck rather than a brick-and-mortar restaurant, allowing the business to move throughout the Tampa Bay region while maintaining a consistent menu and cooking process.\n\n## What to Expect\n\nBirria King centers its menu around traditional birria, a slow-roasted meat preparation simmered for hours in a seasoned consommé. Alaraj said the meat is cooked low and slow, shredded, then returned to the broth to absorb flavor before being served.\n\nThe food truck format allows Birria King to serve at breweries, events, catering bookings, and rotating community locations. Alaraj said the goal is to focus on quality, consistency, and fresh preparation rather than an oversized menu.\n\nAssistant chef Crystal works alongside Alaraj on the truck, helping with prep and service during busy periods.\n\n## Menu and Vision\n\nThe signature item is the birria taco, made with fresh, gluten-free corn tortillas prepared daily. Each tortilla is dipped into the consommé, filled with melted Chihuahua-style cheese and birria beef, then griddled until crisp. Tacos are served with cilantro, onions, and house-made red and green salsas.\n\nBeyond beef birria, the menu includes grilled chicken tacos, with two variations being tested: a seasoned grilled chicken option and a chicken birria prepared in the consommé. Steak is also offered as carne asada. All proteins can be served as tacos, quesadillas, or burritos.\n\nAdditional menu items include elote cups, made from slow-cooked corn with house seasoning, as well as birria ramen. Alaraj noted that most of the menu is gluten-free, with the exception of the ramen noodles, which will be clearly labeled.\n\nDesserts are prepared in-house and include tres leches cake and flan. Flan flavors may rotate, depending on availability and preparation.\n\nSelect events will feature limited-run offerings such as goat or lamb birria, which Alaraj said reflects the dish’s traditional preparation in Mexico. Oxtail birria may also appear as a specialty item at certain events.\n\n“We shop every day for produce and meat,” Alaraj told Business Debut. “Nothing is frozen, and all of our salsas and sauces are made in-house.”\n\n## Background\n\nBirria King is Alaraj’s first food truck business. He said his interest in cooking expanded during the COVID-19 pandemic, when he began experimenting with tacos and birria at home for family and friends. Encouraged by their feedback, he decided to invest in a food truck and bring the concept to the community.\n\nAlaraj said the focus from the beginning has been fresh ingredients, clear labeling for dietary needs, and authentic preparation.\n\n## Opening Timeline\n\nBirria King will host its soft opening on Friday, February 7, at Outcast Brewing Company in St. Petersburg.
