Despite cocoa’s central role in West African economies, an estimated €2,800–€6,000 per tonne of value is lost before beans ever leave the region — more than the commodity is worth at current prices. Structural inefficiencies like fragmented production, weak post-harvest quality management, opaque intermediaries, extractive pricing, and limited value addition all contribute to systemic underperformance.

In this workshop, three voices with different expertise — from economic analysis to on-the-ground operational reform — will challenge conventional assumptions and ask: Where is the lost value going, and how can we redesign systems to keep more of it where it’s produced?

2. Tech vs Terroir? Rethinking Origin Premiums in a Data-Driven Cocoa World

When: Wednesday, 18 Feb | 10:30–12:30 — Beurs van Berlage, Amsterdam

Focus: Does traditional origin still matter when technology reshapes quality signals?

For decades, origin and terroir have been cornerstones of cocoa value — from single-origin branding to price premiums for fine-flavour beans. Yet as controlled fermentation, digital traceability, and data analysis reshape how we understand flavour and quality, the industry faces a challenging question: Is provenance still the best proxy for value — or is it masking variability that technology can clarify or even override?

This workshop brings together experts to debate whether modern supply chains can preserve distinct origin identities while using technology to manage risk and enhance quality outcomes. It touches on fundamental questions about what buyers are really paying for today: ambience of place, biological terroir, or codified process performance.

Expect a rich discussion on how process design can both reveal and preserve terroir — and whether origin premiums still make sense in a world where precise data can tell a more consistent story about bean quality.

The chocolate stories hitting headlines across Europe aren’t just about flavour or supply — they’re about safety. As heavy-metal concerns and regulatory scrutiny intensify, industry professionals can no longer treat contamination as a peripheral issue. Instead, they must confront where risks enter the supply chain and how to manage them before products hit shelves.

This workshop cuts straight into the science and practical knowledge behind contamination pathways — from soil uptake of cadmium to post-harvest exposure to lead, hydrocarbons and other chemical hazards. It goes beyond testing to explore where interventions can realistically make cocoa and chocolate compliant and safer , with hands-on insights into monitoring and mitigation at early stages of processing.

As regulators tighten limits and analytical tools become more sensitive, success will depend less on documents and more on controllability at the first mile of processing — a theme this session will explore in depth.
