There is a limit to how many Industries and Cargoes can be defined at any one time. The author or FIRS has decided that they prefer developing cohesive, themed economies with more specific cargoes, rather than the Kitchen Sink Set that was the old Extreme economy with more generic cargoes.

If you want something akin to the old Extreme economy, give AXIS a try instead, it is a FIRS fork that is built more like FIRS Extreme.
