Experimenting with dinners

I have a problem with food. I think I always have since a child, but now the metabolism has slowed down and the weight has caught up.

I’ve done everything. Intermittent Fasting, OMAD, MyFitnessPal etc etc.

We’ve been on Gousto for around 6 months now but that’s started getting stupidly expensive, plus there’s SO much prep involved.

Now, I’m incredibly lazy and if there’s even a whiff of friction, I’ll be put off from doing a thing.

Having to come down from work and do dinner, bath and a reasonable bedtime for my daughters. That’s a lot to cram into a 1.5 hour window. And when Gousto takes an hour to prep and cook 🤷.

I know, woe is Ed. Just do this or just do that. But it doesn’t work. Neither for myself or my partner. We always resort to a takeaway. Get it ordered when I finish work and it’ll be here by the time the girls are in bed. (We’ve started doing the girls separate dinner, more on that in a bit).

So now for my current ‘solution’.

Burritos.

Burritos are amazing. They’re versatile and you can add whatever sauces, toppings or sides to keep things interesting. I’m comfortable with eating the same thing every day.

Whilst working as an apprentice, I had macaroni cheese and a Rustlers burger every day for lunch. It was all I could afford and it was filling enough to sustain me until dinner. All for £2 😂

Anyway, back to the burritos. I can meal prep a weeks’ worth in the space of an hour once the girls are asleep. They freeze well too. Tin foil, cling film, greaseproof paper, whatever you have. Let them cool, bang them in the freezer.

Then they need ~6 minutes in the microwave wrapped in a damp paper towel. I split it into 3 minute halves, just for the fun of it to be honest. Give the middle a squish, that kind of thing. Otherwise the noises from the microwave start getting a bit scary.

As for the girls, at the same time as prepping myself, I cook them a big portion of pasta with chicken, onions, sweetcorn, some mayo and whatever else is left in the fridge. If they don’t fancy that, there’s other quick bits that we can cook for them.

With the burritos it’s just:

  • 750g Beef Mince
  • 400g Rice
  • Tinned chopped tomatoes
  • 2 tins Kidney Beans
  • 1 can of Sweetcorn
  • 6 Tortilla Wraps
  • Cumin
  • Chilli flakes
  • Paprika
  • Whatever else to pad it out

Then wrap up into 6 portions and put them in the freezer.

Then at dinner time, out of the freezer into the microwave, then some sour cream and some tortilla chips.

I’ve finished my first week and I’m not bored of them yet. They’re a little dry towards the end of the week where I think the rice starts to absorb the chilli. I’m going to experiment with them, so the ingredients list might change.

I’m considering going full burrito lifestyle with some Breakfast Burritos too, which I’ve done in the past.
