Is iOS -> GrapheneOS worth it if losing iMessage

RCS E2EE has now shipped with iOS 26.5, so cross platform E2EE messaging is the default now (as long as both of your carriers support it). I’m not sure how well RCS works on GOS still but if you can get it working then you should be set.
