This seems like a long-standing control issue even from the earliest of racing games.
I think the standard approach was to make the digital inputs control the rapid acceleration of the steering wheel. So hitting left would not peg the wheel all the way left but turn the wheel very fast to the left. In this way, you could tap left in a particular frequency to control how fast the car was turning.
(Maybe all of that is obvious… I have some particular experience here so I don’t know what is obvious anymore… some of my very first games were really bad racing games.)
