Dropping jdk 11 support

When trying to upgrade to gradle 9, we find that jdk 11 can’t run gradle anymore. I have updated the PR to remove jdk 11 from our ci matrix. Posting here on the forum for wider visibility. Does anyone still need to build the engine with jdk 11?
