I decided to investigate further and found an scientific explanation of how the baking soda interacts with the green tea leaves to give the tea its pink hue (“Once the tea turns burgundy, the liquid is shocked with ice or cold water to preserve the color”). The color looks appealing, although I would be more confident had the Atlas Obscura article not included a quote comparing it to pigeon-blood (having done my part to prevent the spilling of pigeon blood and all).\n\nI have enough of an idea of what baking soda tastes like to have some concerns about using it in tea (another recipe cautions against using too much baking soda). I am similarly not so sure about salty tea.
